Bread Maker Fruit Loaf with Sourdough Discard

Cutting into "his" fruit bread below. I say his because it is his favorite lol

Regular Fruit Bread Recipe (Sourdough Version below)

275mls warm water

50mls oil

1 1/4t salt

50g brown sugar

490g flour

1 1/2T milk powder

1T Cinnamon

1T mixed spice

3 1/2 t yeast

1/3 c dried fruit

I add all the above ingredients (in that order) into the bread maker and set it on the sweet cycle.

For the Sourdough Version (this is one of my best kept secrets I share in my How to Bake with Sourdough mini course - how to add sourdough discard to any recipe)

There are 3 changes to the above recipe:

1: Add 60g fed or unfed starter

2. Water amount decreases. Add in 245mls water (instead of 275mls)

3. The flour amount also decreases to 460g (instead of 490g)

I add in the sourdough starter in after the water and give it a little stir to gently separate. The add in the other ingredients as per normal.
