A beautiful friend a Bacon and Cheese focaccia last night and I was like ohhh I'm going to make that too!
I did my sourdough version 🍞
I took my sourdough starter out of the fridge yesterday and fed her late night around 1130pm 40g starter, 30g flour, 30g water (it's Christmas time - we're up late lol). I used most of this mix in the bread but reserved some.
She had risen by the morning, so I started the bread as soon as I got up (alongside all the other Christmas goodies lol).
90-100g active sourdough starter
Mixed with 30g cooled melted honey
50g olive oil and 250g warm water
Then add 375g flour
10g salt
Mix with a fork
Set aside for 10 minutes then perform one set of stretch n folds (8 1/4 turns) wait 10 minutes
Add 1 cup grated cheese, quarter cup cooked bacon (cooled)
Perform 2 more sets of stretch n folds 10-15 mins apart
Then leave to rise until doubled (that didn't take long in our hot kitchen today lol )
Place into oven dish, slather with oil and dimple the dough Cover with your choice of herbs and bake at 200 deg C for 20-25 mins
